Delicious stuffing! I take fabricated this twice. The kickoff time nosotros followed the recipe exactly and information technology was dandy. Second fourth dimension I made it GLUTEN Free for my blood brother for early Thanksgiving meal: I dried a 12 oz loaf of Udi's white staff of life in the oven, and kept everything else at the original quantities (roughly, I didn't mensurate). It actually came out well! A lilliputian on the moist side and then maybe could have used a little more bread proportionally, but it was wonderful and enjoyed past all.

Made this as a test prior to Thanksgiving. It was ok but not the winner of the diverse stuffings we tried. If I was to make it again I think I would use a light oil or something other than the bacon fat to cook the other ingredients in. I think the bacon fat overwhelmed them and made information technology a little to rich. Just having the bacon would probably been plenty flavour for the dish.
